Old-Fashioned Persimmon Pudding

Warmly spiced persimmon pudding, reminiscent of old-fashioned plum pudding, baked like rich pumpkin pie filling. Serve with ice cream!
Ingredients:
  • cooking spray
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 eggs, beaten
  • 2 cups milk
  • 2.5 cups persimmon pulp
  • 6 tablespoons butter, melted
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C) and generously spray a 9x13-inch baking dish with cooking spray.
  • Combine all-purpose flour, baking soda, baking powder, salt, cinnamon, white sugar, and brown sugar in a bowl and whisk until fully combined. In a separate large bowl, beat eggs and milk until smooth, then gradually add the flour mixture and persimmon pulp in alternating additions, mixing well each time. Stir in melted butter and transfer the batter into the prepared baking dish.
  • Bake in the preheated oven for about 1 hour until a toothpick comes out clean when inserted into the pudding. Let it cool before serving.
