Old-World Cabbage Soup

Delicious vegetable soup with cabbage, carrots, celery, sweet onion, and a hint of ketchup. For best flavor, make ahead and reheat before serving.
Ingredients:
  • 0.5 medium head cabbage, chopped
  • 4 large carrots, cubed
  • 1 sweet onion, minced
  • 4 stalks celery, cubed
  • 0.75 cup ketchup
  • 1.5 cups tomato-vegetable juice cocktail
  • 3 cups vegetable broth
  • 1 (14.5 ounce) can chicken broth
  • 1 (14.5 ounce) can peeled and diced tomatoes
Instructions:
  • Add the chopped cabbage to a large 8-quart soup pot.
  • Place diced carrot in a microwave-safe bowl with 2 tablespoons of water. Microwave on high for 6 minutes.
  • Place diced celery in a microwave-safe dish with 2 tablespoons of water. Microwave on high for 4 minutes.
  • Combine microwaved vegetables with minced sweet onion, celery, and ketchup in a pot. Pour in juice cocktail, vegetable broth, chicken broth, and tomatoes. Refill each can with water and incorporate into the mixture. Cover and bring to a boil, then simmer for 30 minutes.
  • Simmer gently and let it cook for 2 to 3 hours.
  • Accompany with French baguette slices. Offer salt, black pepper, and Tabasco at the table for personalized seasoning.
