Simplify dinner with a cozy slow-cooker corned beef and vegetable dish. Prep in 15 minutes, then let the magic happen in the crockpot. A comforting meal for gatherings or weeknights.
Ingredients:
  • 2 1/2 pounds medium new potatoes, (about 8), cut in half
  • 2 cups baby-cut carrots
  • 1 cup frozen small whole onions, thawed
  • 1 corned beef brisket (3 to 3 1/2 pounds)
  • 1/8 teaspoon pepper
  • 1/2 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
Instructions:
  • Combine potatoes, carrots, and onions in a 4- to 6-quart slow cooker.
  • Wash corned beef well and discard seasoning packet. Arrange beef on top of vegetables and season with pepper. Combine 1/2 cup water with Worcestershire sauce, then pour over the beef.
  • Let the flavors meld together over a gentle heat for 8 to 9 hours until the beef and vegetables reach a tender perfection.
  • Take out the beef and vegetables from the slow cooker, cover to keep warm. Transfer the juices from the slow cooker to a 1-quart saucepan and bring to a boil. Combine cornstarch and cold water until smooth, then stir into the boiling juices. Cook while stirring constantly until the sauce thickens. Serve the sauce over the beef and vegetables as desired. Note: Recipe tested in slow cookers with side and bottom heating elements; adjust for models with only a heated base according to the manufacturer's instructions.
