Ingredients:
  • 310ml (1 1/4 cups) warm water
  • 2 tsp (7g/1 sachet) dried yeast
  • 10.00 gm caster sugar
  • 63.70 gm olive oil
  • 450g (3 cups) plain flour
  • 4.80 gm sea salt flakes
  • 30.00 ml fresh rosemary leaves
  • 20 pitted kalamata olives
Instructions:
  • In a small bowl, gently mix together water, yeast, sugar, and 2 tablespoons of oil. Allow the mixture to rest in a cozy, draft-free spot for 5 minutes or until it becomes frothy.
  • In a bowl, combine flour and half of the sea salt. Create a well in the center and pour in the yeast mixture. Stir with a wooden spoon until combined, then use your hands to form the dough in the bowl.
  • Transfer the dough to a lightly floured surface and knead for 10 minutes until it's smooth and elastic. Grease a bowl with oil, place the dough in the bowl, and cover it with plastic wrap or a damp tea towel. Let it rest in a warm, draft-free place for 45 minutes until it doubles in size.
  • Preheat the oven to 200°C. Brush a 20 x 30cm Swiss roll pan with 2 teaspoons of remaining oil. Punch down the centre of the dough, then knead on a floured surface for 2 minutes until elastic. Transfer the dough to the pan, cover with a damp towel, and let it prove in a warm, draught-free place for 20 minutes or until doubled in size. Press dimples into the dough, brush with remaining oil, sprinkle with rosemary and salt, then press olives into the dough.
  • Bake until golden and focaccia sounds hollow when tapped on base, approximately 25-30 minutes. Serve warm or at room temperature.
