Blend cottage cheese cheesecake - creamy, easy, lower cal than traditional.
Ingredients:
  • 0.25 cup butter
  • 1 cup graham cracker crumbs
  • 0.25 teaspoon ground cinnamon
  • 2 cups cottage cheese
  • 0.5 cup milk
  • 3 tablespoons all-purpose flour
  • 2 tablespoons lemon juice
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C. Melt butter in an 8 inch square pan then mix in graham cracker crumbs, 2 tablespoons sugar, and 1/4 teaspoon cinnamon. Press the mixture onto the bottom and sides of the dish and set aside.
  • Blend together cottage cheese, milk, eggs, flour, lemon juice, vanilla, 2/3 cup sugar, and 1/4 teaspoon salt in a blender until smooth. Pour the mixture into the prepared crust.
  • Place the dish in the preheated oven and bake for 60 minutes or until the filling is set. Let it cool to room temperature before serving.
