Effortlessly prepare flavorful homemade matzo ball soup, a Passover essential, by simmering seasoned matzo balls in savory chicken broth.
Ingredients:
  • 2 (10 ounce) packages matzo crackers
  • 0.5 cup butter
  • 6 eggs
  • salt and pepper to taste
  • 3 tablespoons minced fresh parsley
  • 2 onions, minced
  • 5 ounces matzo meal
  • 96 ounces chicken broth
Instructions:
  • Bring a large pot of water to a lively boil with a sprinkle of salt.
  • In a large bowl, gently crumble the matzo crackers into small pieces. Pour enough water to cover the cracker pieces and let them soak until soft. Once they are soft, carefully drain off any excess water.
  • In a large skillet over medium heat, warm up the oil and then add the drained matzos, stirring until they are dry and slightly browned. Remove from heat and combine with eggs, salt, pepper, parsley, and onions.
  • Add matzo meal gradually until mixture holds together. Form a 2-inch matzo ball and test in boiling water. Ball should float without breaking. If it sinks, mix in another beaten egg. Once desired consistency is achieved, shape entire mixture into 2-inch balls.
  • In a large saucepan over medium heat, bring chicken broth to a lively simmer. Gently drop in the matzo balls and serve the soup as they float to the surface.
