Quick and easy spiced ginger cookies, ideal for gifting or hosting. reminiscent of grandma's classic recipe.
Ingredients:
  • 1.125 cups white sugar, divided, or as needed
  • 0.75 cup butter
  • 4 tablespoons molasses
  • 2 cups all-purpose flour
  • 3 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1.5 teaspoons ground cinnamon, divided, or as needed
  • 1 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and grease 2 cookie sheets.
  • Using an electric mixer, blend 1 cup of sugar, butter, molasses, and egg in a mixing bowl until smooth.
  • Combine flour, baking soda, ginger, 1 teaspoon cinnamon, cloves, salt, and nutmeg by sifting them together in a bowl. Then, beat the mixture into the butter until fully combined.
  • In a shallow bowl, mix together 1/8 cup sugar and 1/2 teaspoon cinnamon. Roll 1-inch cookie dough balls in the sugar-cinnamon mixture until coated, then place on the prepared cookie sheet.
  • Bake in the preheated oven for about 11 minutes until golden and edges are set. Allow to cool for at least 5 minutes before serving or storing.
