Oma's Rhubarb Cake

Delicious spring rhubarb cake with buttery cinnamon streusel topping.
Ingredients:
  • 2 eggs, beaten
  • 1 cup sour cream
  • 3 cups diced rhubarb
  • 1 cup white sugar
  • 0.25 cup butter, softened
  • 0.25 teaspoon ground cinnamon, or to taste
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C) and generously grease and flour a 9x13-inch baking dish.
  • In a large bowl, combine flour, sugar, baking soda, and salt. Mix in eggs and sour cream until smooth, then gently fold in rhubarb. Transfer the batter to the prepared dish and spread it out evenly.
  • Prepare the streusel by combining sugar and butter until smooth in a bowl. Add flour and mix until crumbly. Sprinkle the mixture over the cake and lightly dust with cinnamon.
  • Bake until a toothpick inserted in the center comes out clean, approximately 45 minutes in the preheated oven.
