Whip up these quick and easy hazelnut cookies by chilling dough, slicing, topping with candy sprinkles, and baking. Delightfully buttery and perfect for any occasion!
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 0.5 teaspoon salt
  • 1.5 cups all-purpose flour, sifted
  • 0.25 teaspoon baking soda
  • 0.5 cup ground hazelnuts
  • 1 egg, beaten
  • 0.25 cup multicolored candy sprinkles (jimmies), or amount needed
Instructions:
  • In a mixing bowl, cream together the butter, sugar, egg, and salt until light and fluffy. Gently fold in the flour and baking soda until just combined. Lastly, add the hazelnuts and mix well.
  • Transfer the dough onto a gently floured surface and form into a 2 1/2-inch log. Wrap tightly in wax paper and chill in the refrigerator overnight.
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease the baking sheets.
  • Slice the log into 1/8 inch thick pieces and arrange them on baking sheets with 2-inch spacing. Brush the tops with beaten egg and add sprinkles for extra flair, if desired.
  • Bake in a hot oven until edges are golden brown, for 12 to 15 minutes. Allow to cool on wire racks, then store in an airtight container.
