Whip up a delightful and customizable omelette in no time for a satisfying meal.
Ingredients:
  • 2 large free-range eggs
  • 1 small knob of unsalted butter
  • 1 small handful of grated Cheddar cheese (optional)
  • 2 or 3 sprigs of fresh basil
  • 1 handful of cherry tomatoes
  • olive oil
  • 2 or 3 field-type mushrooms
Instructions:
  • Prepare a basic omelette by cracking eggs into a mixing bowl with a pinch of sea salt and black pepper. Beat well, then heat butter in a frying pan. Once melted, add the eggs, swirling to spread evenly. When partially cooked, sprinkle cheese, fold in half, and cook until golden. Serve. For a tomato and basil version, tear basil, chop tomatoes, fry briefly in butter and oil with salt, then add eggs and cook as before. For a mushroom option, fry chopped mushrooms in butter and oil until golden, then add eggs and cook. Sprinkle Cheddar over the top and finish as with the basic omelette.
