One Pan Chicken Breast and Asparagus in Lemon Cream Sauce

Succulent lemon cream chicken with asparagus, cooked in one pan. Perfect with mashed potatoes or cauliflower. Amped up with a hint of spicy red pepper flakes.
Ingredients:
  • 1/2 lemon, zested and juiced
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes, or to taste
  • 1/2 cup chicken broth
  • 1 1/2 pounds boneless, skinless chicken breasts, about 2
  • Salt and pepper, to taste
  • 2 Tablespoons olive oil
  • 1/2 cup diced shallots
  • 1 pound asparagus, cut into 3-inch pieces, discarding any tough ends
  • 1 Tablespoon minced fresh basil
  • 2 Tablespoons unsalted butter
  • 1/3 cup heavy cream
  • Fresh basil and lemon slices for optional garnish
Instructions:
  • Mix vibrant lemon zest, freshly squeezed lemon juice, aromatic minced garlic, a sprinkle of red pepper flakes, and savory chicken broth in a small bowl, allowing the flavors to meld together.
  • Cut each chicken breast in half lengthwise to make 4 cutlets. Dry them gently with paper towels and season them lightly with salt and pepper.
  • In a large skillet over medium heat, heat olive oil until shimmering. Carefully add chicken pieces and brown for 3 to 5 minutes per side until golden. Transfer chicken to a plate to keep warm; it will finish cooking later.
  • In the same skillet, sauté shallots until softened, approximately 2 minutes. Pour in the chicken broth mixture and bring to a boil.
  • Place the chicken back in the skillet with any juices. Arrange asparagus pieces around the chicken and sprinkle with minced basil. Bring to a boil, cover, and simmer until the asparagus is tender and the chicken is cooked through, 10 to 15 minutes.
  • Uncover and raise heat to medium. Add butter one tablespoon at a time, stirring constantly until sauce slightly thickens. Remove from heat and mix in cream. Transfer to a serving dish and top with fresh basil and lemon slices.
