One-pot creamy chicken Liguria: a quick and delicious family favorite.
Ingredients:
  • 500g chicken breast fillets, cut into 3cm pieces
  • 1 brown onion, finely chopped
  • 500ml (2 cups) Liquid Stock Chicken Style
  • 375g dried casarecce pasta
  • 85g (1/3 cup) mascarpone
  • 40.00 gm bought basil pesto
  • 100g (1 cup) pre-grated pizza cheese
  • 40.00 ml pine nuts, lightly toasted
  • 2 tsp finely grated lemon rind
Instructions:
  • In a deep frying pan over medium-high heat, heat half of the oil. Cook the chicken, stirring occasionally, for about 5 minutes until it turns a beautiful golden brown. Then, transfer the chicken to a plate.
  • Heat the remaining oil in the pan, then add the onion and cook for 5 minutes until softened. Add the garlic and cook for 1 more minute until aromatic.
  • Pour the stock along with 375ml (11/2 cups) water into the pan and bring it to a boil. Mix in the pasta. Cover and let it simmer for 15 minutes. Add the chicken back into the pan. Continue simmering without the lid, stirring occasionally, for 6-8 minutes until the chicken is fully cooked and the pasta is al dente. Season with salt and pepper. Take it off the heat and gently fold in the mascarpone and pesto.
  • Preheat grill to medium-high. Sprinkle pasta with cheese and grill for 5 minutes or until golden. Serve with pine nuts, lemon rind, and basil sprinkled on top.
