One-pan chicken with bocconcini and olives

Whip up this quick and delicious one-pan chicken with bocconcini and olives in just 15 minutes!
Ingredients:
  • 2 large Australian Chicken Breast Fillets
  • 2 tsp dried oregano
  • 1 brown onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 400g can cherry tomatoes
  • 400g can diced tomatoes
  • 120g olive
  • 180g bocconcini, coarsely torn
  • 90g pesto
Instructions:
  • Slice the chicken pieces in half to create thinner cutlets. Sprinkle with fragrant oregano and season generously. In a hot pan, heat half of the oil before searing the chicken for 2 minutes on each side until beautifully golden. Place the cooked chicken on a large heatproof plate to rest.
  • Heat the remaining oil in the pan, then sauté the onion and garlic until the onion softens. Stir in the cherry tomatoes and diced tomatoes and bring to a boil.
  • Add the chicken back to the pan along with the olives and bocconcini. Cook over medium-high heat for 8 minutes until the chicken is cooked through and the sauce slightly thickens. Serve with a generous drizzle of pesto.
