Whip up a tasty one-pan chicken and pea pasta to satisfy your whole family.
Ingredients:
  • 8 small RSPCA Approved Chicken Drumsticks
  • 300g macaroni
  • 400g can Diced Tomatoes
  • 2 chicken stock cubes, crumbled
  • 90g pea
  • 62.50 ml flat-leaf parsley leaves
Instructions:
  • In a large deep frying pan over medium-high heat, warm the oil until shimmering. Sear the chicken for 8 minutes, turning occasionally, until golden brown. Transfer the chicken to a heatproof bowl.
  • Toss in the onion to the pan and sauté until it caramelizes slightly. Introduce the garlic and cook until aromatic. Pour in the tomato, oregano, stock cubes, and 2 1/4 cups (560ml) of water. Let it simmer before adding the pasta and reintroducing the chicken. Simmer gently for 25 minutes until the chicken is cooked through and the pasta is al dente. Fold in the peas and continue to cook covered for an additional 5 minutes.
  • Garnish with fresh parsley before serving.
