One-pan stovetop chicken and sausage with peppers and potatoes is a quick and flavorful weeknight meal.
Ingredients:
  • 2 tablespoons olive oil, or more as needed
  • 1 sweet Italian sausage, casing removed
  • 3 small Yukon Gold potatoes, cut in half
  • 3 boneless, skinless chicken thighs, cut into 2-inch pieces
  • 1 teaspoon kosher salt, or to taste
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 1 teaspoon dried Italian herb blend
  • 1 small red onion, sliced
  • 1 cup sliced red bell pepper
  • 0.5 cup chicken broth
  • 0.5 lemon, juiced
  • 2 slices Italian bread, toasted
  • 1 tablespoon chopped fresh Italian parsley
Instructions:
  • Assemble all the ingredients.
  • In a nonstick skillet, add 2 tablespoons of olive oil. Break up sausage into small pieces and scatter them in the pan with potato pieces, flesh-side down. Place chicken pieces evenly in the pan with the smooth side down. Season with salt, black pepper, cayenne, and sprinkle with Italian herbs.
  • Sprinkle sliced onion and bell peppers evenly. Sear over high heat until sausage begins to brown, approximately 5 minutes.
  • Lower the heat to medium-high, cover the pot, and cook until the potatoes are just tender, approximately 5 minutes.
  • Pour in the flavorful broth and simmer until it's reduced by half.
  • Squeeze fresh lemon juice into the mixture and give it a good stir. Taste and adjust seasoning as necessary.
  • Top some freshly toasted bread with the delicious mixture and finish it off with a generous sprinkle of fresh parsley.
