Sauté chicken-apple sausage with vibrant veggies for a delicious one-pan meal.
Ingredients:
  • 1 pound small red potatoes, cut in half or quartered if larger than 2 inches
  • 2 Tablespoons olive oil
  • 1 pound fully cooked chicken-apple sausage, sliced ¼-inch thick
  • 1/2 teaspoon red pepper flakes
  • 1 red onion, sliced vertically
  • 1 1/2 cups sliced bell peppers, mixed colors
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 cup chicken stock or broth
  • Salt and freshly ground black pepper to taste
Instructions:
  • In a large pot, simmer potatoes in salted water until tender, about 10 minutes. Drain them when ready.
  • In a large nonstick skillet, heat up olive oil over medium heat, then cook and stir potatoes until they start to turn golden brown, for approximately 15 minutes.
  • Cook sausage and red pepper flakes in a skillet for 1 minute. Add onion, bell peppers, and broccoli; cook until broccoli is bright green and crisp-tender, about 3 minutes.
  • Combine the aromatic garlic and savory chicken broth in the pot. Simmer until the liquid has cooked down. Finish with a perfect touch of salt and pepper to elevate the flavors.
