Try this quick and satisfying sausage and veggie dish for a hearty dinner in just 40 minutes.
Ingredients:
  • 1 bag (24 ounces) frozen diced potatoes with onions and peppers
  • 1/2 teaspoon dried oregano or basil leaves
  • 2 cups broccoli flowerets
  • 1 ring (about 3/4 pound) bologna or smoked sausage
  • 3 slices process American cheese, cut diagonally in half
Instructions:
  • In a 10-inch skillet, heat oil over medium-high heat. Add potatoes, oregano, and pepper. Cover and cook for 8 to 10 minutes, stirring occasionally, until potatoes are lightly browned.
  • Add the broccoli to the mixture, then incorporate the bologna. Cover and simmer for approximately 15 minutes or until the bologna is heated. Sprinkle with cheese, cover again, and continue heating until the cheese is melted.
