Satisfying one-dish turkey sausage and veggie skillet ready in just 25 minutes - easy and colorful!
Ingredients:
  • 1 ring (14 oz) fully cooked turkey Polska-kielbasa sausage, cut diagonally into 1/2-inch slices
  • 2 cups chopped zucchini (about 2 small)
  • 2 cups fresh whole kernel corn or frozen corn
  • 2 cups grape tomatoes
  • 1/4 cup water
Instructions:
  • Preheat a 12-inch nonstick skillet over medium-high heat for 2 minutes. Coat it with cooking spray and add the sausage. Cook for 5 minutes, flipping once, until browned. Remove the sausage from the skillet and keep it warm.
  • Take the skillet off the heat and generously spray with cooking spray. Add zucchini and corn; cook for 4 minutes, stirring often. Mix in tomatoes, water, and pepper, scraping the skillet to release the brown bits. Cover and cook for 4 minutes until the tomatoes start to burst.
  • Add the sausage back to the skillet and cook for an additional 2 minutes uncovered, or until the liquid has nearly evaporated.
