Get creative with an abundance of farm-fresh produce for an exciting meal!
Ingredients:
  • 1 large red onion, cut into thin wedges
  • 1 large red capsicum, cut into 1.5cm pieces
  • 1 large zucchini, halved, cut into 1cm-thick slices
  • 1 medium eggplant, cut into 2cm cubes
  • 20.00 ml fresh thyme leaves
  • 500g extra-lean beef chipolata sausages
  • Gravy, to serve
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced, then generously grease a 20cm x 28cm (base) baking dish that is 6cm deep.
  • In a bowl, combine onion, capsicum, zucchini, eggplant, thyme, garlic, and oil. Mix well to coat all ingredients. Season with salt and pepper. Transfer the mixture to a baking dish and bake for 15 minutes, or until the vegetables begin to soften.
  • Place the sausages on top of the vegetables and bake for 25-30 minutes, flipping the sausages halfway through, until the vegetables are tender and the sausages are cooked through. Serve with gravy.
