One pan creamy chicken tenders

Creamy one pan chicken dinner to simplify dishes and maximize flavor.
Ingredients:
  • 700g chicken tenderloins
  • 200g cherry tomatoes
  • 2 garlic cloves, finely chopped
  • 2 tsp chopped fresh thyme leaves
  • 115g (1/2 cup) dried risoni pasta
  • 250ml (1 cup) chicken stock
  • 300ml Cooking Cream
  • 110g (2/3 cup) frozen peas
  • 50g baby spinach leaves
  • Chopped fresh parsley to serve, optional
Instructions:
  • In a large deep-sided frying pan over high heat, heat the oil until shimmering. Season the tenderloins, cook each side for 1-2 minutes until golden brown, then transfer to a plate and set aside.
  • - Place the cherry tomatoes in the pan and sauté them for 2-3 minutes until they start to blister. Transfer them to a plate. - Add the garlic and thyme to the pan, stirring gently for 30 seconds until fragrant. - Stir in the risoni to coat it, then pour in the stock and bring it to a boil. - Reduce the heat to low, cover the pan, and let it simmer for 10 minutes.
  • Mix the cooking cream and peas into the risoni. Add the chicken back to the pan with spinach. Cover and cook for 3-4 minutes until the chicken is heated through and the spinach wilts. Serve on plates, garnish with tomatoes, and sprinkle with parsley if desired.
