One-pan cheesy pasta dish, perfect for a quick and easy weeknight dinner.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 8 shortcut bacon rashers, finely chopped
  • 2 leeks, white part only, sliced
  • 2 x 29g sachets cheese sauce powder
  • 1 litre milk
  • 23.40 gm wholegrain mustard
  • 125.00 gm dry white wine
  • 375g packet fresh fettuccine
  • 400g broccoli, cut into small florets
  • Lemon zest, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat oil. Add bacon and cook for 4 minutes until lightly browned, stirring occasionally. Then, add leek and cook for 2 minutes until leek softens slightly. Set aside 1/4 of the bacon mixture for later use.
  • In a large bowl, add the cheese sauce powder. Slowly pour in the milk while whisking until you achieve a smooth mixture. Then whisk in the mustard.
  • Pour the wine into the pan and let it simmer. Then, pour in the milk mixture and cook while stirring constantly for 5 minutes until the mixture bubbles and thickens. Lower the heat to medium-low and add the pasta, broccoli, and 1/3 cup of water. Cook for 5 minutes or until the pasta softens, stirring occasionally. Season with salt and pepper to taste.
  • Garnish the pasta mixture with the bacon mixture and lemon zest before serving.
