Effortlessly create a delicious one-pan roast chicken and rice meal.
Ingredients:
  • 280g jar Chargrilled Vegetables, drained reserving oil
  • 1 pkt (about 1.8kg) Australian Chicken Portions Herb Sprinkle
  • 300g rice
  • 750ml chicken stock
  • 40.00 ml oregano leaves
Instructions:
  • Preheat your oven to 180°C. In a large ovenproof frying pan or casserole dish over high heat, add 1 tablespoon of the reserved oil from the chargrilled vegetables. Cook half of the chicken for 3 minutes on each side until golden brown. Transfer to a plate and repeat with the remaining chicken.
  • Combine the rice, stock, and chargrilled vegetables in the pan and bring to a boil. Place the chicken over the rice and cover with foil.
  • Roast for 40 minutes, or until chicken is fully cooked and rice is tender.
  • Garnish with a sprinkle of fragrant oregano before serving.
