One-pan herby green rice & fish

Elevate plain rice with this versatile one-pan dish. Customize with seafood, veggies, and greens for a quick, delicious meal with minimal cleanup. Perfect for busy weeknights!
Ingredients:
  • 8 spring onions
  • 2 cloves of garlic
  • 1 bunch of fresh coriander (30g)
  • 100 g baby spinach
  • 1 mug of basmati rice (300g)
  • 4 x 150g white fish fillets, such as cod, haddock, pollock, megrim, skin off, pin-boned from sustainable sources
  • olive oil
  • 4 tablespoons natural yoghurt
  • 2 teaspoons harissa
  • optional: ½ a fresh red chilli
  • 1 lemon
Instructions:
  • Prepare the spring onions, garlic, and coriander, reserving some coriander for garnish. Blend them with baby spinach and water until smooth. Pour the green sauce over rice in a casserole pan, cook uncovered for 5 minutes, then add fish fillets on top. Season, drizzle with olive oil, cover, and cook on low for 5-7 minutes. Mix yoghurt with harissa. Serve the dish garnished with sliced spring onion, chilli, coriander, and lemon wedges, along with the harissa yoghurt. Enjoy with a green salad.
