Lemony Pasta al Limone: A creamy and easy one-pan pasta dish that perfectly combines pasta, lemon, and Parmesan for a bright and flavorful meal. Optional basil and greens can be added for extra flair.
Ingredients:
  • 400 g spaghetti or linguine
  • 2 large unwaxed lemons
  • 1 clove of garlic peeled and bashed but kept whole
  • 100 ml olive oil
  • 1 teaspoon flaky sea salt
  • 50 g salted butter or vegan butter
  • 40 g Parmesan or vegan Parmesan-style cheese (I use a vegetarian one) grated
  • ½ a bunch of basil (15g) leaves picked and torn (optional)
Instructions:
  • Fill a large lidded saucepan with 400g spaghetti or linguine. Grate in the zest of 2 large unwaxed lemons, add 1 clove of garlic (peeled and bashed but kept whole), 100ml olive oil, and 1 teaspoon flaky sea salt. Add 1 litre boiling water, cover with a lid, and bring to a boil. When boiling, remove the lid and simmer for 8 minutes, tossing the pasta in the thickening water every 30 seconds with tongs. After 8 minutes, squeeze in the juice of one lemon, simmer for 2 more minutes without the lid. Remove from heat, stir in 50g salted butter or vegan butter and 20g grated Parmesan or vegan alternative. Let sit for a minute for the pasta to absorb the water. Adjust seasoning with salt, lemon juice, and butter or olive oil. Serve in bowls and top with remaining Parmesan and torn basil leaves, if desired.
