One-pot chicken spaghetti al limone recipe

One-pan pasta dinner with zesty lemon and flavorful poached chicken. Elevate the dish using cooking water for added depth of flavor.
Ingredients:
  • 400g chicken breast fillets
  • 250g dried spaghetti pasta
  • 36.40 gm olive oil
  • 375ml (1 1/2 cups) thickened cream
  • 40g butter
  • 2 tsp finely grated lemon rind
  • 21.00 gm fresh lemon juice
  • 70g (1 cup) finely grated parmesan
  • Finely shredded lemon rind, to serve
Instructions:
  • Fill a deep saucepan three-quarters full with water and add the chicken. Heat over medium-high heat until it simmers. Skim the surface, then reduce heat to low and simmer for 10 minutes. Use tongs to transfer chicken to a plate, keeping the cooking liquid.
  • Turn up the heat to high until the cooking liquid is boiling. Add the pasta and cook according to package instructions until al dente. Drain the pasta and transfer it to a heatproof bowl. Drizzle oil over the pasta and toss with tongs until evenly coated. Cover to keep warm before serving.
  • Combine cream, butter, and grated lemon rind in a saucepan. Bring to a boil over high heat, then reduce to medium heat and simmer for 15 minutes until thickened. Stir in three-quarters of the parmesan until melted. Toss in lemon juice, pasta, and chicken using tongs until well combined and warmed through.
  • Serve the pasta in individual bowls, garnish with shredded lemon rind, and season with pepper before enjoying.
