Skillet Chicken Parmesan

Classic chicken Parmesan made in a skillet, served with rice or spaghetti for a quick and comforting meal.
Ingredients:
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large egg
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 to 2 pounds chicken cutlets
  • 1 cup olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, sliced
  • 2 cups marinara tomato sauce, homemade or store-bought
  • 6 ounces mozzarella cheese, sliced
  • Fresh basil, garnish
  • Red pepper flakes, garnish
  • Cooked spaghetti or rice, for serving
Instructions:
  • Preheat your oven to 400°F while warming olive oil in a 12-inch oven-safe skillet over medium heat.
  • Prepare breading stations: Combine salt, pepper, and flour in one bowl; whisk the egg in a second bowl; and measure breadcrumbs and Parmesan cheese into a third bowl. Coat chicken cutlets with seasoned flour, dip in egg, then coat with breadcrumbs. Place breaded chicken on a plate.
  • Heat oil until breadcrumbs sizzle immediately when added (325°F). Fry breaded chicken cutlets for 4 minutes per side, until 90 percent cooked through. Avoid overcrowding the pan for optimal crispiness. Reserve 1 tablespoon olive oil in the skillet; pour the rest into a bowl to cool.
  • In a skillet over medium-low heat, sauté the onion and garlic until the onion is translucent, about 2 minutes. Then, stir in the marinara sauce and let it simmer gently.
  • Complete the chicken Parmesan dish by returning the chicken to the skillet with the sauce. Then, layer each chicken piece with a slice of fresh mozzarella. Transfer the skillet to the oven and bake for 10-12 minutes until the sauce is bubbly, the cheese is gooey, and the chicken reaches 165°F at its thickest points.
  • Serve this delectable chicken Parmesan immediately over pasta, rice, or alongside bread and a salad. Sprinkle with red pepper flakes and fresh basil for added flavor. To store leftovers, simply refrigerate the chicken Parmesan once cooled for up to 4 to 5 days. For optimal taste, reheat in a 325°F oven with a bit of sauce until the cheese is perfectly melted again.
