Easy one-pot pasta with juicy chicken breast for a comforting and satisfying meal.
Ingredients:
  • 1 boneless skinless chicken breast, cut in 1-inch pieces
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon butter
  • 1 cup thinly sliced white mushrooms
  • 1/4 lb uncooked spaghetti, broken in half
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup heavy whipping cream
  • 2 cups baby spinach leaves
  • 1/4 cup shredded Parmesan cheese
  • 1/2 teaspoon fresh lemon juice
Instructions:
  • Combine chicken, Italian seasoning, and pepper flakes in a small bowl. In a 4-quart saucepan over medium-high heat, melt butter. Add chicken and cook without moving for 2 minutes until browned. Stir in mushrooms and cook for 4 to 6 minutes, stirring often, until mushrooms soften.
  • Combine spaghetti, broth, whipping cream, and garlic in a pot. Bring to a gentle boil over high heat. Lower the heat to medium and cook for 12 to 16 minutes, stirring occasionally, until the pasta is tender. Add spinach and Parmesan cheese. Take the pot off the heat and allow it to rest for 1 minute. Stir in lemon juice before serving.
