One-Pot Creamy Chicken Tortellini

Whip up a delectable pasta using rotisserie chicken, broccoli florets, and tortellini for a satisfying and hassle-free dinner!
Ingredients:
  • 2 tablespoons butter
  • 1 cup diced onions
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/2 cup heavy whipping cream
  • 1 package (20 oz) refrigerated cheese tortellini
  • 2 cups chopped cooked chicken
  • 1 package (10 oz) fresh broccoli florets (about 4 cups)
  • 4 oz (half of 8-oz package) cream cheese, cut into cubes and softened
  • Shredded Parmesan cheese, if desired
Instructions:
  • In a 5-quart Dutch oven, melt the butter on medium-high heat. Add the onions, Italian seasoning, salt, and pepper flakes. Cook for 4 to 6 minutes, stirring often, until the onions start to brown on the edges.
  • Combine broth and rich whipping cream in a pot and bring it to a boil over high heat. Add tortellini, chicken, and broccoli. Bring back to a boil, then lower the heat and let it simmer uncovered for 5 to 7 minutes. Stir frequently until the tortellini is cooked and the broccoli is tender.
  • Take the mixture off the heat and gently stir in the cream cheese until it's fully melted. Allow it to sit for 5 minutes before giving it a good stir. Finish by generously sprinkling Parmesan cheese on top.
