Creamy chicken and bacon pasta ready in 30 minutes for a quick and delicious dinner.
Ingredients:
  • 120g smoked shortcut bacon, chopped
  • 2 garlic cloves, thinly sliced
  • 500g chicken mince
  • 125ml (1/2 cup) white wine
  • 375g pkt spinach cheese ravioli
  • 375ml (1 1/2 cups) salt reduced chicken style liquid stock
  • 300ml ctn thickened cream
  • 120g pkt baby spinach leaves
  • 40g (1/2 cup) finely grated parmesan, plus extra, to serve
  • 3 green shallots, trimmed, thinly sliced
Instructions:
  • Preheat a large non-stick frying pan over high heat. Add bacon and garlic and cook for 5 minutes until bacon is golden, stirring frequently. Then add chicken mince and cook for another 5 minutes, breaking up any lumps with a wooden spoon until the mince changes color.
  • Pour the wine into the frying pan and simmer for 2 minutes until slightly reduced. Stir in the ravioli, stock, and cream. Simmer gently for 8 minutes, stirring occasionally, until the mixture thickens and the ravioli is tender. Season to taste, then add the spinach and parmesan. Serve sprinkled with shallot and extra parmesan.
