One-pan lemon garlic chicken and asparagus cooked together for easy cleanup. Deliciously flavored with lemon, garlic, and butter.
Ingredients:
  • 6 skinless, boneless chicken thighs (about 2 pounds)
  • 1 teaspoon Italian seasoning, or herb blend of choice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 Tablespoons olive oil
  • 1 Tablespoon unsalted butter
  • 1 cup chicken broth
  • 1 pound asparagus, ends trimmed, cut into 1 1/2-inch pieces
  • 1 Tablespoon fresh minced garlic, or to taste
  • 1/2 lemon, juiced
  • 4 Tablespoons cold unsalted butter
  • 1 Tablespoon fresh minced parsley
  • Lemon slices for garnish (optional)
Instructions:
  • Dry the chicken thighs with a gentle patting motion, then remove any excess fat.
  • Mix Italian seasoning, paprika, garlic powder, salt, and pepper in a small bowl. Rub herb mixture on both sides of chicken thighs.
  • In a large nonstick skillet over medium heat, heat olive oil and 1 tablespoon of butter until sizzling. Add chicken in a single layer and sear until golden brown on both sides, approximately 5 minutes per side. Transfer chicken to a plate and cover to keep warm.
  • Deglaze the skillet with chicken broth, scraping up any flavorful browned bits. Bring to a vigorous boil and simmer until the broth reduces by half, about 3 to 5 minutes.
  • Cook the asparagus until it turns into a vibrant deep green color, stirring occasionally, for 3 to 5 minutes.
  • Add in aromatic garlic and a squeeze of zesty lemon juice to the vibrant asparagus and cook for about a minute. Slowly incorporate the luxurious butter, one tablespoon at a time, ensuring each pat fully melts before adding the next, stirring with enthusiasm.
  • Place the chicken back into the skillet, tucking it into the flavorful sauce and asparagus. Sprinkle with fresh parsley and cook until the chicken reaches 165°F (74°C) when checked with an instant-read thermometer, about 2 to 3 minutes.
  • Serve the chicken thighs with a generous spoonful of sauce and a beautiful garnish of lemon slices. Enjoy while warm.
