One-pan veggie lasagne

Simplify your lasagna creation with layers of vibrant vegetables in a convenient one-pan dish. Delicious and easy to make!
Ingredients:
  • 1 lemon optional
  • green pesto optional
  • 1 leek
  • 50 g unsalted butter
  • 500 g asparagus
  • 50 g plain flour
  • 2 teaspoons English mustard
  • 800 ml semi-skimmed milk
  • 300 g fresh or frozen peas
  • 300 g fresh or frozen broad beans
  • ½ a bunch of fresh mint (15g)
  • 80 g Parmesan cheese plus extra to serve
  • 80 g mature Cheddar cheese
  • 250 g fresh lasagne sheets
  • 50 g blanched almonds
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Slice leek, cook in butter and oil. Add asparagus stems, season, and cook for 10 min. Stir in flour, mustard, and milk for white sauce. Add peas, beans, mint, mash veg, add cheese and asparagus tips. Mix in pasta, top with almonds, more cheese, and bake for 20-25 min until golden. Serve with dollop of pesto and salad.
