One-Pot Chicken, Sausage and Sauerkraut

Easy one-pot dinner: Tender chicken, sauerkraut, sausage, and potatoes cooked to perfection. Family favorite!
Ingredients:
  • 1 tablespoon olive oil
  • 4 bone-in skin-on chicken thighs (about 1 1/2 lb total)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 14 oz kielbasa sausage, cut into 1/2-inch slices
  • 1 medium onion, sliced
  • 1 1/4 lb medium Yukon gold potatoes (3 or 4), cut into 1/4-inch slices
  • 2 cups refrigerated sauerkraut, drained, rinsed (from 16-oz bag)
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • Sour cream, as desired
Instructions:
  • In a 5-quart Dutch oven, heat oil over medium-high heat. Season chicken with 1/4 teaspoon each of salt and pepper. Sear chicken in the Dutch oven for 9 to 11 minutes, turning once, until both sides are beautifully golden brown. Transfer chicken out of the Dutch oven.
  • Sear kielbasa in Dutch oven until lightly browned, then set aside. Saute onion until starting to brown. Return kielbasa to the pot with potatoes, sauerkraut, broth, salt, and pepper. Place chicken on top, bring to a boil, then simmer covered for 25-30 minutes until chicken is cooked through and potatoes are tender. Serve with sour cream.
