Simplify your chicken pot pie with a one-pot twist. Baked to perfection, this comforting dish will become a family favorite in no time.
Ingredients:
  • 1 carton (32 oz) Progresso™ chicken broth
  • 4 1/4 cups uncooked wide egg noodles (8 oz)
  • 2 cups shredded cooked chicken
  • 2 cups frozen mixed vegetables
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup half-and-half
  • 2 tablespoons chopped Italian (flat-leaf) parsley, if desired
Instructions:
  • In a 4- to 5-quart Dutch oven, generously layer chicken broth, egg noodles, chicken, mixed vegetables, thyme, salt, and pepper ensuring the ingredients float above the liquid.
  • Bring the mixture to a boil. Lower the heat to medium and simmer without covering for 8 to 10 minutes. Stir occasionally until the liquid is mostly absorbed and the pasta is cooked to your desired tenderness.
  • Add the half-and-half and cook for 1 to 2 minutes until warmed. Garnish with parsley before serving.
