Prepare fiber-rich soup in advance for a delicious winter comfort.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 carrot, finely chopped
  • 2 garlic cloves, crushed
  • 5.00 gm paprika
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1kg smoked ham hock, rind removed (see note)
  • 1.5 litres chicken style liquid stock
  • 400g can crushed tomatoes
  • 400g can cannellini beans, drained, rinsed
  • 400g can butter beans, drained, rinsed
  • Fresh parsley, chopped, to serve
  • Parmesan, finely grated, to serve
  • Crusty bread, to serve
Instructions:
  • In a large saucepan over medium-high heat, warm the oil. Add onion, celery, and carrot. Sauté for 5 minutes until softened. Stir in garlic, paprika, cumin, ground coriander, and cinnamon. Cook for 1 minute until fragrant.
  • Combine ham hock, stock, and tomatoes in a pot. Season generously with pepper, cover, and bring to a boil. Reduce heat and simmer for 1 hour and 30 minutes. Uncover and simmer for another 30 minutes until the ham is tender. Remove the ham hock, shred the ham, discard the bone, and return the shredded ham to the soup.
  • Stir in beans and let simmer for 5 minutes until warm. Garnish with fresh parsley and grated Parmesan, then serve with a side of crusty bread.
