Versatile and hearty one-pot meal that can be made in a slow cooker, oven, or stove-top.
Ingredients:
  • 125.00 ml plain flour
  • 1.5kg beef chuck steak, cut into 3cm pieces
  • 2 brown onions, finely chopped
  • 2 red capsicum, deseeded, cut into 2cm pieces
  • 2 long red chillies, deseeded, finely chopped
  • 16.00 gm brown sugar
  • 10.00 gm ground cumin
  • 10.00 gm smoked paprika
  • 1 tsp ground chilli powder
  • 2 x 400g cans chopped tomatoes
  • 125.00 gm water
  • Sour cream, to serve
  • Diced avocado, to serve
  • Warm corn tortillas, to serve
  • Salt, to season
Instructions:
  • In a shallow dish, season flour with salt and pepper. Gently coat beef in the seasoned flour.
  • In a large, deep frying pan over medium-high heat, sizzle the beef in batches for 3 to 4 minutes until nicely browned, adding more oil if needed. Transfer to a plate and cover to keep warm.
  • Sautee onions and garlic until tender for 3 minutes. Stir in capsicum, chili, Worcestershire sauce, sugar, cumin, paprika, and chili powder. Cook and stir for another minute until fragrant. Pour in tomatoes and water, then bring to a boil.
  • Transfer the mixture into the slow cooker, then add the meat and stir to combine. Cover and cook on HIGH for 3 to 4 hours until the meat is tender and the sauce thickens. Serve with sour cream, avocado, and tortillas.
