Effortless one-pot roast beef with crispy rosemary potatoes - let the oven work its magic!
Ingredients:
  • 40.00 ml horseradish cream
  • 4 garlic cloves, crushed
  • 23.40 gm wholegrain mustard
  • 2 tsp freshly ground black pepper
  • 1.5kg Family Beef Roast
  • 800g white potatoes, thickly sliced
  • 20.00 ml rosemary leaves
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 220C and generously grease a large baking dish.
  • In a bowl, mix together the horseradish cream, half of the garlic, mustard, and pepper. Season with salt, then generously coat the beef with the mixture.
  • In a bowl, toss the potato with rosemary and oil. Spread the potato mixture evenly in the baking dish and layer the beef on top. Roast in the oven for 15 minutes.
  • Lower the oven temperature to 190C. Continue roasting for an additional hour for medium doneness or until the beef reaches the desired level of doneness and the potatoes are tender. Cover and let it rest for 15 minutes before serving.
  • Slice the succulent beef, and plate alongside tender potatoes and a vibrant mix of salad leaves.
