Whiskey-infused beans with bacon, tomatoes, and jalapeno - perfect for BBQs or Mexican gatherings.
Ingredients:
  • 6 ounces bacon, roughly chopped
  • 1 yellow onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 cups chicken stock
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup water
  • 1 green onion, chopped
  • 2 tablespoons chopped fresh cilantro, or more to taste
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground dried chipotle pepper
Instructions:
  • In a 2-quart pot, cook the bacon over medium-high heat, turning occasionally, until evenly browned, about 5 to 7 minutes. Remove excess bacon grease if necessary to prevent boiling. Drain cooked bacon on paper towels.
  • Saute the onion in the pot with the remaining bacon grease until translucent for about 5 minutes. Then add the chopped jalapeno and continue to saute until starting to soften, approximately 2 minutes.
  • Combine the bacon, pinto beans, tomatoes, water, green onion, cilantro, salt, garlic powder, and chipotle with the seasoned onions. Simmer gently until hot and flavors blend, approximately 15 minutes, stirring occasionally.
