One-Skillet Italian Chicken, Spinach, and Farro

One-pot chicken, spinach, and farro - a crowd-pleaser! Perfect with crusty bread and salad.
Ingredients:
  • 12 ounces skinless, boneless chicken breast, cubed
  • 0.5 cup onion, diced
  • 1 (14.5 ounce) can chicken broth
  • 1 cup farro
  • 1 (14.5 ounce) can Italian-style diced tomatoes
  • 6 ounces baby spinach
  • 0.5 teaspoon basil
  • 0.5 teaspoon dried parsley
  • salt and pepper to taste
  • 2 tablespoons freshly grated Parmesan cheese, or to taste
Instructions:
  • Preheat a skillet over medium heat and lightly coat with cooking spray. Sauté chicken and onion until chicken is fully cooked and no longer pink in the center, about 5-10 minutes. Set chicken aside.
  • 1. In a skillet, bring chicken broth to a boil, then stir in farro. Cover and simmer until most of the liquid is absorbed, about 15 to 20 minutes. 2. Add chicken back to the skillet, along with diced tomatoes (with liquid), spinach, basil, and parsley. Season with salt and pepper. 3. Reduce heat, cover, and simmer for 5 to 7 minutes. 4. Remove from heat, let stand covered for 3 to 5 minutes before serving.
  • Garnish with freshly grated Parmesan cheese before serving.
