Onion & goat's cheese tarts

Easy and elegant tartlets for effortless entertaining.
Ingredients:
  • 375g block frozen puff pastry, thawed
  • 1 egg, lightly beaten
  • 170g jam
  • 200g log firm goat's cheese, sliced into 4 rounds
  • 20.00 ml thyme leaves
  • Olive oil, to drizzle
  • 57.20 gm honey (optional)
  • Watercress sprigs, to serve
Instructions:
  • Preheat your oven to a toasty 200°C while you line a baking tray with parchment paper. Then gently lay the pastry on a dusted surface and roll it out to a lovely 5mm thickness.
  • Cut out 8 rounds with a 7.5cm pastry cutter. Place 4 rounds on the baking tray, brush with egg. Cut a hole in the center of the other 4 rounds using a 5cm cutter, discard the small circles. Place the rings on top of the bases and press gently to seal.
  • Place the tart shells in the oven and bake for 5 minutes, or until lightly puffed. Then, gently press down the center of the pastry and fill the cavity with onion jam. Top with a round of goat cheese and sprinkle with thyme leaves for the perfect finishing touch.
  • Drizzle oil over the dish and bake for an additional 8-10 minutes until the pastry is perfectly puffed and crisp, and the cheese begins to melt.
  • Drizzle tarts with luscious honey before serving alongside fresh watercress.
