Onion and Gruyere Soup

Caramelized onions in butter with white wine, chicken broth, Gruyere, white pepper, and nutmeg create a deliciously subtle soup.
Ingredients:
  • 3 tablespoons butter
  • 6 onions, thinly sliced
  • 0.5 teaspoon salt
  • 1.5 cups white wine
  • 3.5 cups chicken broth
  • 0.25 teaspoon ground white pepper
  • 2 cups shredded Gruyere cheese
Instructions:
  • In a saucepan over medium heat, melt the butter until foamy. Add onions and sauté for a couple of minutes. Reduce heat, sprinkle in salt, cover, and simmer gently until very tender for about 60 minutes.
  • Combine the caramelized onions in a bigger pot and heat over medium. Pour in the wine and bring to a boil. Add chicken broth, pepper, and nutmeg, then simmer gently, uncovered, for 15 minutes.
  • Melt shredded cheese into a smooth and gooey texture. Serve and enjoy the irresistible cheesiness!
