Onion bhajees with mint yoghurt

Ingredients:
  • 1 x 200g container natural yoghurt (Attiki brand)
  • 125.00 ml firmly packed finely chopped fresh mint leaves
  • 15.00 gm caster sugar
  • 2 large (about 180g each) brown onions, peeled, halved, each half thinly sliced lengthways
  • 3 eggs, lightly whisked
  • 40g (1/3 cup) plain flour
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • Salt & freshly ground black pepper
  • 60ml (1/4 cup) vegetable oil
Instructions:
  • Mix together creamy yoghurt, fresh mint, and a touch of sugar in a small bowl. Let the flavors meld while you prepare the rest of the dish.
  • In a large bowl, mix together the onion and eggs. Stir in the flour, cumin, and coriander until well combined. Season with salt and pepper to taste.
  • In a frying pan over medium-high heat, heat oil. Spoon 1/4 cup (60ml) batter onto the pan, keeping them 2cm apart. Cook for 2 minutes on each side until golden and cooked through. Transfer to a plate lined with paper towel and cover with foil to keep warm. Repeat the process.
  • Top the onion bhajees with the refreshing mint yoghurt before serving.
