Create a cozy dinner using leftover Christmas cheese. Combine various cheeses, avoiding too much blue cheese.
Ingredients:
  • 3 heaped tablespoons mascarpone cheese or crème fraîche
  • 100 g mixed leftover cheese
  • 250 g dried taglierini
  • extra virgin olive oil
  • 2 slices of quality sourdough bread
  • 1 clove of garlic
  • 5 shelled walnuts
  • 1 sprig of fresh rosemary, thyme or marjoram
  • olive oil
Instructions:
  • For the pangritata, lightly toast the sourdough. Peel the garlic and blend it in a food processor with the toasted bread, walnuts, and herbs until fine. Heat a non-stick frying pan with olive oil, add the pangritata, and fry until golden and crisp. In a bowl over simmering water, melt mascarpone or crème fraîche with leftover cheeses. Remove from heat. Boil pasta according to package instructions, drain, and add to the melted cheese, tossing to coat. Finish with a sprinkle of crispy pangritata and a drizzle of olive oil before serving.
