Crispy mozzarella sticks

Crispy fried mozzarella sticks - the ultimate cheesy snack.
Ingredients:
  • 120g (2 1/2 cups) panko breadcrumbs
  • 450g block mozzarella (see note)
  • Vegetable oil, to shallow-fry
  • Tomato pasta sauce, warmed, to serve
  • Pesto dip, to serve
Instructions:
  • Prepare a dredging station by setting up three shallow bowls - one with flour, one with beaten egg, and one with panko breadcrumbs. Line a baking tray with parchment paper. Slice the mozzarella into 1.5cm-thick slices, then cut into sticks.
  • Coat the sticks in flour, then dip in egg and roll in breadcrumbs, pressing gently to cover. Transfer to the tray and refrigerate for 20 minutes to chill before cooking.
  • Heat oil in a frying pan until it reaches 1cm up the side. Fry the sticks in batches until golden, about 1 minute per side. Drain on paper towel-lined tray, season with salt, and serve warm with pasta sauce and pesto dip.
