Deliciously moist orange, polenta, and almond cake.
Ingredients:
  • 125 g butter, chopped, at room temperature
  • 161.25 gm caster sugar
  • 4.40 gm vanilla extract
  • 2 eggs
  • 150.00 gm polenta
  • 100.00 gm almond meal (or other meal, or combination)
  • 4.00 gm baking powder (gluten-free)
  • Zest and juice of 2 oranges
  • Thick cream, to serve
  • Orange slices, to serve
Instructions:
  • Preheat your oven to a cozy 160°C. Grease a 20cm round cake pan and line the base with baking paper.
  • In a bowl, cream butter, sugar, and vanilla with an electric mixer until smooth. Gradually add eggs one at a time, mixing well after each addition.
  • Gently combine polenta, almond meal, baking powder, zest, and juice. Transfer the mixture to the pan, ensuring the top is smooth.
  • Bake for 55-60 minutes until a skewer comes out clean. Let it cool in the pan for 5 minutes before transferring to a wire rack to cool. Serve with cream and orange slices on top.
