Orange, Poppy Seed, and Butternut Squash Coffee Cake

Transform leftover butternut squash puree into a deliciously moist cake with zesty orange and poppy seed flavors, topped with a crunchy streusel.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 cup firmly packed brown sugar
  • 0.75 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 6 tablespoons cold unsalted butter, cut into cubes
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 1 cup white sugar
  • 2 large eggs, at room temperature
  • 1 cup mashed, cooked butternut squash
  • 0.25 cup freshly squeezed orange juice
  • 1.5 tablespoons grated orange zest
  • 0.5 cup buttermilk, at room temperature
  • 1 tablespoon poppy seeds
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9-inch springform pan with a removable bottom.
  • Combine flour, brown sugar, cinnamon, salt, cloves, and nutmeg in a bowl, mixing until fully incorporated. Add butter and crumble to create chunky streusel. Set aside.
  • Combine flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg, then set aside.
  • In a large bowl, use an electric mixer to cream together sugar and butter until light and fluffy. Beat in eggs one at a time, ensuring each addition is well mixed. Add butternut squash, orange juice, orange zest, and vanilla extract, mixing until combined. Gently stir in half of the dry ingredients, followed by the buttermilk, and then the remaining dry ingredients, mixing until just combined. Lastly, fold in poppy seeds.
  • Spread the batter in the prepared pan evenly, then sprinkle the streusel mixture on top.
  • Place your springform pan on a baking sheet in the preheated oven. Bake for 55-60 minutes until a toothpick inserted in the center comes out clean. Let it cool for 20 minutes, then remove the sides of the pan. Serve warm or at room temperature.
