Orange and poppy seed muffins with cream cheese icing

Make delicious orange and poppy seed muffins with creamy cheese icing.
Ingredients:
  • 80ml orange juice
  • 30.00 ml poppy seeds
  • 300g self-raising flour
  • 220g caster sugar
  • 0.63 gm ground nutmeg
  • 2 tsp grated Navel orange rind
  • 150g butter, melted
  • 2 free range eggs, lightly beaten
  • 120g sour cream
  • 2 Navel oranges, peeled, segmented
  • Extra poppy seeds, to decorate
  • Honey, to serve
  • 375g cream cheese, softened
  • 55g icing sugar mixture
Instructions:
  • Preheat your oven to 190C fan-forced and line 12 holes of a 1/3 cup (80ml) muffin pan with paper cases.
  • Combine fresh orange juice and fragrant poppy seeds in a small bowl, then let them soak for 10 minutes.
  • In a large bowl, mix together flour, sugar, and nutmeg. In a separate bowl, whisk together orange rind, butter, egg, sour cream, and poppy seeds. Combine the orange mixture with the flour mixture, stirring until just combined (avoid overmixing). Pour the batter into prepared pan. Bake for 20 minutes or until a skewer inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Using an electric mixer, blend cream cheese and icing sugar until smooth. Frost muffins with the icing, then garnish with segmented orange, extra poppy seeds, and a drizzle of honey. Serve promptly.
