Quick and delicious orange poppyseed muffins ready in 30 minutes.
Ingredients:
  • 375.00 gm self-raising flour
  • 4.00 gm baking powder
  • 141.90 gm caster sugar
  • 30.00 ml poppyseeds
  • 75.08 gm extra-light olive oil
  • 85.80 gm buttermilk
  • 2 eggs, lightly whisked
  • 2 large oranges, rind finely grated, juiced
  • 100g cream cheese
  • 37.50 gm pure icing sugar
Instructions:
  • Heat the oven to 200°C. Line a baking tray with twelve extra-strength muffin cases that hold 1/2 cup each.
  • Sift flour and baking powder into a bowl, then mix in sugar and poppyseeds. Create a well in the center.
  • Combine oil, buttermilk, egg, 2 teaspoons orange rind, and 1/2 cup orange juice in a jug. Pour the mixture into the well and gently fold until just combined. Fill muffin cases three-quarters full with the batter. Bake for 15 to 20 minutes or until a skewer inserted into the center comes out clean. Allow muffins to cool slightly on a tray for 5 minutes before serving.
  • In a small bowl, combine cream cheese and icing sugar. Use a wooden spoon to beat until fluffy. Stir in 1/2 teaspoon grated orange rind and 1 teaspoon orange juice until fully mixed. Spoon onto muffins and enjoy.
