Delightful almond poppy seed muffins with zesty orange glaze.
Ingredients:
  • 3 eggs
  • 2.5 cups white sugar
  • 1.125 cups vegetable oil
  • 1.5 teaspoons salt
  • 1.5 teaspoons baking powder
  • 1.5 tablespoons poppy seeds
  • 1.5 teaspoons vanilla extract
  • 1.5 teaspoons almond extract
  • 0.25 cup orange juice
  • 0.5 teaspoon almond extract
  • 2 teaspoons butter, melted
Instructions:
  • Combine the eggs, 2 1/2 cups white sugar, and vegetable oil in a bowl; beat until smooth. Stir in milk, salt, baking powder, poppy seeds, vanilla, almond flavoring, and flour until well combined.
  • Bake the batter in paper-lined muffin cups filled 3/4 full or 3 small greased loaf pans in a 350°F (175°C) oven. Bake for 15-20 minutes for muffins and 50-60 minutes for loaves until the tops are browned and a toothpick inserted in the center comes out clean.
  • Quickly dip the warm muffins into the glaze and place them on a cooling rack. For the loaves, pour the glaze over them while still in the pans. Allow them to cool slightly before removing from the pans. Enjoy the delicious messiness!
  • For the glaze, gently heat in a saucepan 3/4 cup of sugar, orange juice, 1/2 teaspoon vanilla, 1/2 teaspoon almond flavoring, and 2 teaspoons melted butter until the sugar melts. Drizzle over loaf pans or dip muffin tops once they cool to room temperature. (Skip the glaze if you prefer a cleaner option.)
