Ingredients:
  • 2 oranges
  • 20.00 gm butter, or olive oil
  • 5 eggs
  • 250g caster sugar
  • 4.00 gm baking powder
  • 250g almond meal
  • 2 tsp ground cardamom
  • 12.00 gm icing sugar
Instructions:
  • Simmer whole oranges for 1.5 hours, occasionally adding water to the pot as needed. Drain and let cool. (refer to note)
  • Prepare the non-stick springform cake tin by coating it with butter and sprinkling caster sugar evenly inside.
  • Combine eggs and sugar in a bowl, then whip with a stick blender.
  • Place 2 whole oranges into the bowl of eggs and sugar. Use a stick blender to gently break up the oranges and blend until the mixture is nearly smooth, with no large orange pieces remaining.
  • Combine almond meal, baking powder, and ground cardamom in a bowl. Blend together using a stick blender until well mixed.
  • Transfer the mixture into a baking tin and bake in a preheated 180°C oven for 50-60 minutes, or until the top develops a beautiful golden brown color.
  • Allow the mixture to cool in the baking tin. Once cooled, remove the treat from the tin and sprinkle with icing sugar for a sweet finish.
