Festive fruit and cinnamon creamed rice for a delicious holiday twist.
Ingredients:
  • 1 x 430g can creamed rice
  • 20.00 ml finely grated orange rind
  • 1 x 425g can cherries in syrup
  • 1 x 7cm cinnamon stick
Instructions:
  • Mix the rice and orange rind in a bowl, then distribute evenly into four 185ml (3/4-cup) serving glasses. Cover with plastic wrap and chill in the fridge.
  • In a medium saucepan over medium-low heat, gently warm the cherries, syrup, and cinnamon stick for 2 minutes, stirring occasionally. Then, delicately transfer the cherries to a heatproof bowl using a slotted spoon.
  • Turn up the heat to medium-high and let the mixture simmer for 6 minutes or until the syrup thickens. Allow it to sit for 5 minutes to cool slightly and then remove the cinnamon before serving.
  • Drizzle the syrup over the cherries and mix gently to coat. Serve the cherry mixture over the rice mixture.
